Bagara Baingan
Recipe of Bagara Baingan Ingredient Name Unit Quantity

1.First dry fry whole garam masala,mustard and cumin seeds when they start to splatter add onions turmeric,g&g paste.
2.add masalas and add the paste of roasted ground nut ,seasame seeds and coconut pdr cook for 15 min add tamrind ,and jaggery and cook till oil ozzes out
3.In the mean time cut the vankaya as four parts but don't cut at the end
4.Immediately put them in the oil, fry slowly stirring occassionally till they are fully softened. and add to the cooking gravy
5.This is very good with rice, pulaos, and chapatis. and a must with biryanis

Ingredients
Basmati rice – 1 cup
Tomato – 3 big ones
Onion – ½ or 1 small
Peas – ½ cup
Ginger – 1 inch piece
Garlic – 3 cloves
Tomato paste – 2 tbsp (optional)
Chilli powder - 1 tsp
Turmeric powder – ¼ tsp
Cilantro or coriander leaves
Salt
Oil – 2 tbsp
Tomato – 3 big ones
Onion – ½ or 1 small

Tomato paste – 2 tbsp (optional)
Chilli powder - 1 tsp
Turmeric powder – ¼ tsp

Mustard seeds – ½ tsp
Chana dal -1 tsp
Urad dal – 1 tsp
Black pepper – 8 to 10
Cumin seeds – ½ tsp
Fennel seeds– ¼ tsp
Star anise - 1
Cardamom - 1
Cloves - 2
Bay leaf - 1
Cinnamon – 1 inch
Cashews - few

Directions:
Grind garlic, ginger and green chillis in a blender to make a with little water to make a fine paste.
Heat the oil in a pan or pot. Add the cloves, cinnamon, cardomon or elachi, bay leaves and mint and fry it for 1/2 minute. Do not let it to get burned. Now add the garlic, ginger and chilli paste and fry it for another 2 minutes. Add the onions to it and fry it for another 5 minutes and until the onions or golden brown.
Add the tomato and let it stand for 5 minutes, stirring occasionally. Add the water and salt. When the water is boiling add the rice and reduce the heat to medium for 10-15 mintues, stirring occasionally. Reduce the heat again to low and let it stand for few more mintues or until all the water is absorbed, and the rice is fully cooked and fluffy.
Note: If you are using pressure cooker, take it from the stove or burner or gas after one whistle or sound. You can add peas for additional flavor
Maggi ka pakoda
1/2 onion chopped fine
2 tbsp coriander leaves chopped
1/2 cup besan
2 green chillies chopped fine
salt to taste (the noddles already has salt so you might want to add very little)
Then slowly add the besan. Add as little besan as possible, enough to bind the noodles
together. You can add a few spoons of water if you need to make it bind together. Add a
little salt if needed.
Make little round balls of this mixture. Flatten them like patties.
Then deep fry them in low flame until golden brown.

1/2 tsp lemon juice

let it cook for a min, then add all the dry masalas. When the masalas mix well add the peas, then
add the potatoes. cook this for 5 mins. Then add salt and a little lemon juice. Cook for 2 more mins.
Then add coriander leaves. Mix well. let it cool.
Then make small flat patties out of the above mixture. Coat it with rava on both sides.
Then in a pan add a little oil. When it turns hot. Add the pattice and let it fry on low flame, until they are golden brown.
Then flip it over and cook the other side. follow the same steps for the rest of the patties.
For choley

Add cooked channa, little water and bring to a boil. Add salt to taste and cook till the gravy thickens.
Take off the stove.
To make the chaat

1/2 cup - Green chutney
1/2 Red onion, chopped fine
a little coriander leaves chopped fine
In a serving plate, place tikki, pour some choley on it, then add a little yogurt and the chutneys.
Sprinkle onion, and coriander leaves. Serve it hot.

Bread Pizza
Ingredients
4 slices of bread1 cup prepared pasta sauce (you can use your favourite recipe or the bottled sauce is fine too)
1/2 tsp basil (fresh or dried)
1/2 tsp dried oregano
1/2 sliced capsicum
1/2 white onion sliced
1/2 cup olive oil
1 tsp garlic paste
1/2 cup mozzerella cheese
you can use any other toppings you like eg, black olives, jalapenos or pepperoni
Directions
In a pan heat the olive oil and add the garlic paste.Next add the pasta sauce and basil, oregano, saute until the pasta sauce is thick. Turn off the heat and keep this aside
Slice the onions and capsicum and add salt to taste
Take a slice of bread and spread 2 spoonsful of the pasta sauce over it.
Sprinkle some cheese and toppings over it.
In a plate spread a spoonsful of olive oil and sprinkle some oregano flakes over it.
Put the bread over it, so the bottom of the bread is greased with olive oil. Repeat with all the prepared bread slices
Heat the oven to 350 deg and put the bread on the rack and toast until the cheese melts (about 5 minutes)
The pizza can also be made by heating a non-stick pan, place the pizza bread on the non stick pan and cover, cook on low flame until the cheese melts

No Yeast Pizza Dough recipe

Preparation time : 30 mins (approx) | Serves 4 persons
Pizza toppings are very easy to make since it depends mostly upon your taste so any thing that you prefer and in any quantity goes on top. In this recipe, main ingredients for pizza toppings include vegetables, cheese and pizza sauce. For making pizza dough, you can use different dough mixers available but the best tools available are your own hands so use them for preparing pizza dough. If you call this a vegetarian pizza then it will not be wrong since many veges are being used in this recipe.
Ingredients:
4 cloves garlic (chopped)
1 onion (chopped)
1 tomato (chopped)
250 gms boneless chicken (small thin pieces; julienne)
4-5 green chillies (chopped)
1 tspn crushed black pepper
Salt to taste
50g saffron
Pizza Chees as required
Ingredients:

This is real easy Pizza sauce recipe which is prepared the same way almost in every cuisine. Tomato puree, garlic, red chili powder are the main ingredients for pizza sauce and addition of rose merry and oregano during the sauce making process enhances its flavor and smell. Pizza sauce is used as the base for pizza topping.
Ingredients:
1 cup tomato paste
½ cuptomato ketchup
3-4 cloves garlic copped
Salt to taste
1 tbspn red chili crushed
1 tbspn white vinegar
3 tbsn oil
1 tspn black pepper
1 tspn white pepper
1 tspn oregano
1 tspn rose merry
Water to cook
Procedure:
1. Heat oil in a pan and add garlic to give it brown color.
2. Add tomato paste, ketchup, red chili, pepper and salt and cook for 2-3 minutes.
3. Add rose merry and oregano, stir and add ½ cup water in it.
4. Stir continuously and cook on high heat till all the water has been dried.
BBQ Sauce
Ingredients:
4 tomato medium size (cut in cubes)
2 tbspntomato katchup
2 tbspn vinegar
2tbspn brown sugar
2 tbspn hot sauce1 tbspn oil
Procedure:
1. Heat oil in a pan, add tomato pieces in it and let it cook till tomato become soft.
2. After that add tomato kechup, vinegar, brown sugar and hot sauce in it and mix well.
3. Cook the sauce till all the water of tomato has been dried and sauce starts to become denser.
4. Remove the pan from the stove and let it cool at room temperature.
5. In a blender, blend the prepared sauce so that all the tomato pieces with skin blend in the sauce.
6. If you want to make sauce smoother, then drain the sauce using squeezer or drainer.

Here we have an Incredible Pizza Recipe usually known as bbq pizza and sometimes also called Chicken Tikka Pizza. In this recipe normal pizza dough is used and pizza toppings are made of chicken tikka / bbq pieces with vegetables, cheese and sauce such as pizza sauce or bbq sauce

4. Make dough of it using milk. Make sure the dough is soft.
5. Roll the dough using hands its very important to make soft pizza. The best way is to sprinkle flour on the board and using your palm press the dough and roll do it for 5-8 times
6. Put the dough in the deep bowl, cover and leave for 3 hours.
7. After 3 hours the dough will become double. This dough is for two pizzas.

No Yeast Pizza Dough recipe

Ingredients (use vegan versions):
- 4 cups of unbleached flour
- 2 cups of soymilk
- 1 cup of olive oil
- salt
- 5 tblsp baking powder
- sesame seeds
- rosemary and thyme
Mix the baking powder, salt, sesame seeds, rosemary, thyme with the flour. Slowly
add the soy milk and oil until you feel the consistency is right. Knead for about 10
minutes. Let rest for 5 minutes and then use a roller to flatten it up.. Place in oven at
350F for 20 minutes, or until bottom part is light brown...Don't forget to oil the pizza
pan, before placing dough.
Once cooked you can place some cooked or raw vegetables on it, sprinkle some tofu
marinated in tomatoe sauce and then stick it back into the oven for 10 more minutes...

Preparation time: approx. 40 mins.

- 1 1/2 C. warm water (NOT hot water)
- 2 t. active dry yeast (I use instant yeast)
- 2 T. extra virgin olive oil
- 1 1/2 t. salt
- 1 C. whole wheat flour
- 3 C. all-purpose flour plus extra for kneading
In a medium bowl, mix yeast with the cup of whole wheat flour. Add water and oil and stir to combine. In a separate bowl, stir salt into the remaining flour and then add flour to the wet mixture, a little at a time, stirring, until a shaggy dough is formed. Turn the dough out onto a floured counter or board and knead with well-floured hands until smooth (about 5 minutes should do it). The dough will be sticky but try not to add too much extra flour, a moist dough will result in a lighter crust.
Put the dough into an oiled bowl and turn once to coat the dough with oil. Cover with a towel and set aside in a slightly warm place (on top of the fridge is usually good) for about an hour or until the dough has doubled in size.
Turn the dough out onto a counter and cut into four equal pieces. Shape each piece into a ball, place them on a lightly floured surface, then cover with a towel. Allow to rest for another 30 minutes.
Shape the dough: Place a large piece of parchment paper on your work surface and dust it lightly with flour. Working with one piece at a time, and using floured hands, press the dough into a disc and then starting from the center, push the dough out using your fingers and the heel of your palm, trying to keep the circle as uniform as possible. Make sure the dough is not sticking too much by lifting and turning it occasionally and sprinkling extra flour as needed. Flatten dough until it is about 1/4 inch thick (or even thinner if you can manage it). Make sure to leave a rim along the outside that is slightly thicker than the middle. You should end up with a pizza that is approximately 10” in diameter.
Cover and let rest for 10 minutes before adding the toppings. Start rolling out your next crust while the first one is resting. If you are not planning on using all four crusts, wrap the extras loosely in plastic wrap and store in the refrigerator overnight. When you are ready to use it the next day, take it out of the fridge and let it sit at room temperature for at least 30 minutes before rolling it out. If you want
Quick Pizza

Ingredients :
For the dough :
200 gms maida
2 level tsp baking powder
2 tsp oil
½ tsp salt
For the topping :
4 large tomatoes
2 sliced onions
4 cloves garlic, crushed
2 pinch ajwain or ½ tsp oregano
1 tsp sugar
½ tsp chilli powder
1 tbsp oil
salt to taste
For Spreading and Cooking :
1 gms grated cooking cheese
a few capsicum rings
salt and chilli powder to taste
oil for frying
a little butter
Method :
Combine together all the Ingredients::of the dough and make a dough by adding water.
Put the tomatoes into hot water for about 10 minutes.
Take out the skins and slices them.
Heat the oil and sauté the onions for 2 minutes.
Put the garlic and sauté again for a few seconds.
Put the tomato slices, ajwain, sugar, chilli powder and salt and cook for a few minutes.
How to proceed :
Divide the dough into 4 to 5 equal parts.
Roll out about 6 mm. (¼") chapattis and prick slightly.
Heat 1 to 2 tbsp of oil in a frying pan.
Put 1 chapati in the pan and when cooked on one side, turn on the other sides. Spread a little filling and sprinkle plenty of cheese on top.
Put a few capsicum rings, dot with butter, sprinkle salt and chilli powder and cook for 2 minutes.
Then put below the grill until the cheese melts.
Repeat the same procedure for the remaining chapatis.
Ready to serve.
Soft Potato Kachoris
Ingredients :

For the covering :
1 kg potatoes
½ kg arrow root powder
For the stuffing :
1 grated coconut
200 gms roasted peanuts
2-3 green chillies (finely chopped)
1 small bunch of coriander leaves
2 tbsp sugar
Salt to taste
Oil for deep frying
Method :
Pressure cook the potatoes till 5-6 whistles.
After peeling mix well with arrowroot powder to make dough.
Dry Grind the coconut, peanuts, sugar very coarsely.
Add finely chopped coriander, green chillies and salt to taste to this mixtre.
Roll out small puris and put 1 tbsp of this mixture and make balls.
Deep fry in oil to light brown colour.
.Veg Chinese Balls

Ingredients :
3 boiled potatoes
5 french beans
½ teacup boiled green peas
2 green chillies, chopped
1 large capsicum
½ tsp Ajinomoto powder
1 tsp chilli powder
2 tsp soya sauce
½ teacup maida
3 tbsp oil
bread crumbs
salt to taste
oil for deep frying
For serving :
Chilli sauce or tomato ketchup
Method :
Mash the potatoes coarsely.
Chop the French beans and capsicum into small pieces.
Heat the oil in a vessel. When it becomes hot, put the vegetables and Ajinomoto powder.
Cook for 3 to 4 minutes. Add the potatoes, green chillies, chilli powder, soya sauce and salt.
Keep the mixture to cool and shape into balls.
Combine the maida properly in 1 teacup of water.
Dip the balls in this paste and roll into bread crumbs.
Before serving, deep fry in oil.
Serve hot with chilli sauce or tomato ketchup.
Vegetable Fingers

Ingredients :
½ cup green gram
½ cup mixed vegetables (carrot, beans, cauliflower, cabbage, etc.)
3 green chilies
Garlic
Ginger
1 onion
3 tbsp plain yogurt
1 pinch baking soda
Oil
Salt to taste
Method :
Soak green gram in water for 2 hours and grind with salt to smooth paste without adding water.
Boil chopped vegetables. Add these vegetables, baking soda and the yogurt to the paste.
Stir properly and pour this in idli plates & steam in a pressure cooker.
Allow it to cool for few minutes and cut into fingers.
Deep-fry this in oil till it becomes crispy.
Ready to serve hot.
Malai Kulfi

Ingredients :
1 can condensed milk
1 can evaporated milk
1 pt (16 oz) Whipping creme
1 tsp almond powder
1 tsp pistachio powder
½ tsp cardamom powder
1/8th tsp saffron
Method :
Mix all the ingredient in a blender for 2 minutes.
Pour the mixture in to round popsicle maker.
Freeze it for 6 to 8 hour.
To remove frozen kulfi from the mold, place it under a running tap of warm water.
Khandvi
Ingredients
1 teacup besan
3 teacups thin buttermilk
½ tsp haldi powder
¼ tsp asafoetida
4 green chillies
½" piece ginger
salt to taste
For garnishing
3 tbsp oil
1 tsp mustard seeds
2 pinches asafoetida
3 tbsp coriander, chopped
3 tbsp grated fresh coconut
Method:
Make a paste of the green chillies and ginger.
Combine the besan, buttermilk, haldi powder, asafetida, green chilli paste and salt properly.
Heat the mixture and keep stirring constantly.
When very thick, test by spreading a little paste on a plate.
If after about 1 minute, the mixture can be rolled and lifted, it is ready for spreading.
When ready, spread the mixture thinly (with the help of the back of a spoon) on any working surface.
Cool and cut in about 50 mm. (2") strips. Roll up the strips (like small Swiss rolls) and keep on a plate.
Heat the oil in a vessel and sauté the mustard seeds.
When the seeds crackle, take out from the fire, put the asafetida and pour over the arranged rolls.
Decorate with the chopped coriander and grated coconut
Ready to serve.
Notes
Khandvi can also be prepared in a pressure cooker very quickly.
If using pressure cooker, put 2 instead of 3 teacups of thin buttermilk and proceed the same way as above.
In this Method also, testing is a must.
In either Method, if you find difficulty in rolling, once again cook the batter for a very little time and then proceed to cool and roll.
Cheese Puffs
Ingredients :
Other ingredients :
12 khari biscuits
1 chopped green chilli (optional)
4 tbsp grated cooking cheese
a little chilli powder
salt and pepper to taste
For the white Sauce :
2 tbsp butter
2 tbsp maida
2 teacups milk
salt and pepper to taste
Method :
For the White Sauce :
Melt the butter, add the maida and cook for 2 minutes without browning, while stirring throughout.
Take out from the heat and gradually put the milk. Mix till it gets blended properly.
Return to heat and cook slowly, stirring throughout until the sauce gets thickens.
Put salt and pepper and mix properly.
For the Cheesy Puffs :
Combine the white sauce, green chilli, half the cheese, salt and pepper.
Divide each biscuit into 2 parts.
Keep on a baking tray.
On each biscuit, spread a little sauce, sprinkle some cheese and chilli powder.
Bake in a hot oven at 450ºF for 2 to 3 minutes.
Ready to serve.
Orange Cake
Ingredients :
1 cup sugar
5 egg yolks (save the egg whites)
1 orange
(juice and finely grated rind)
1 cup maida
3 ½ tsp baking powder
Method :
In a large bowl mix all the above ingredients.
Fold in 5 egg whites (beaten stiff).
Pour cake mixture into a buttered cake pan. Bake at 375 degrees for 10 minutes.
Lower oven heat to 350 degrees and bake for another 30 minutes.
Remove the cake from oven and cool.
When cake has cooled, remove from pan to a cake plate.
Cut into individual diamond-shaped pieces and serve
Vegetable Burgers
Ingredients :
For vegetable burgers :
12 buns
12 thick tomato slices
12 onion rings
12 salad leaves
butter to fry
tomato ketchup to serve
For the vegetable cutlets :
3 potatoes
3 carrots
250 gms french beans
500 gms cabbage
2 tbsp ghee
2 to 3 onions
¼ tsp haldi powder
1 tsp chilli powder
3 tbsp maida
2 tbsp coriander, chopped
2 to 3 green chillies, chopped
bread crumbs
ghee for frying
salt to taste
Method :
For the vegetable burgers :
Divide the buns horizontally into 2.
Heat the butter in a frying pan.
Cook the buns for about 3 to 4 minutes on each side.
For the vegetable cutlets :
Cut all the vegetables finely. Heat the ghee in a vessel and sauté the onions for 1 minute.
Put the haldi powders, chilli powders and salt and continue to cook until the vegetables are cooked.
Sprinkle the maida on the vegetables, mix and cook again for a few minutes. Mash the vegetables. Put the coriander and green chillies and mix properly. Shape into cutlets. Roll in bread crumbs and shallow fry in ghee.
Ready to serve hot with tomato ketchup.
How to serve :
On each half bun, put a salad leaf, then a vegetable cutlet.
Top with a tomato slice and onion ring.
Sprinkle tomato ketchup and cover with the other half bun.
Serve hot infolded paper napkins with potato wafers.

Paneer Sandwich

Ingredients:
grated Paneer 1/2 cup
Tomatoes 1
Onions 1
Green chillies 2
Red chilli powder 1/4 tsp
Salt to taste
Butter as required.
Paneer Sandwich - Directions:
Chop onions, chillies and tomatoes.
Mix the grated paneer with chopped vegetables, salt, red chilli powder and keep aside.
Take two bread slices and butter them, put some paneer mixture on one slice and cover it with other bread slice.
Put this in sandwich toaster until the bread turns crispy and brown.
Vegetable Sandwich. -

Ingredients:
Sliced bread 1 loaf
Butter 100 gms
Mint chutney - 3 tbsp
Cucumber - 1
Carrots 2
Tomatoes 2
Green chillies 6
Onions 2
Chopped coriander leaves 2 tbsp
Salt to taste.
Pepper powder to taste.
Remove outer skin and cut the vegetables into thin slices.
Mince green chillies and coriander leaves.
Trim brown edge crusts of the bread slices with knife .
Apply butter on one side of bread slices.
Take one buttered bread slices. Spread little chutney on top of butter.
Arrange sliced cucumber and carrots on that.
Put one more buttered slice as second layer on top of vegetables. (Butter applied side should face up).
Now arrange onions and tomatoes slices with minced chillies and coriander leaves.
Sprinkle salt, pepper with a squeeze of lime on the vegetables.
Top with third slice of bread (buttered side facing down)
Press well and cut into four square pieces with sharp knife.
Dot with tomato ketchup and serve immediately.
Egg Sandwiches -
Ingredients:
Bread 6 Slices
Butter 6 tsp
Hard Boiled Eggs 3
Onions 2
Capsicum 1
Potato Boiled 1
Cheese 2 tbsp
Chopped Coriander Leaves 2 tbsp
Mayonnaise 4 tbsp
Green Chilies 4
Pepper to taste
Salt to taste
Boil eggs and potatoes.
Chop eggs, onion, green chilly, capsicum and potatoes separately.
Mix all the Ingredients: except bread and butter in a bowl.
Take two slices of bread and apply one tsp butter on each.
Place the egg mixture on both the slices equally and spread it all over evenly.
Place the slices one above the other.
Similarly stuff other slices with egg mixture.
Pepper and Cheese Rolls

Ingredients:
2 slices - Bread
1 cup - Grated Cheese
1 tsp - White Pepper Powder
coriander to tast
Salt to taste
Oil to fry
Method
- Immerse the bread slices in water.
- Squeeze the water out and crumble the bread.
- Mix the other ingredients and shape it into thin long rolls.
- Deep fry in oil.
- Serve hot with tomato sauce.

Ice cream cake

Vanilla ice cream - 1 cup
Fresh strawberries - 1qt
Sugar (powdered) to taste

Ice cream cake recipe preparation method:-
Either use purchased cake or bake an food cake(the recipe is given below). Cut the cake in half; tear one half into small pieces and set aside.
Spread softened ice cream over cake, pressing down to smooth. Gently press the small cake pieces into the ice cream. Cover and freeze. Place slice strawberries and sugar powder to taste just before serving the ice cream cake.

Gulab jamun balls:
Dry milk (khoya) - 150 gms
Indian cottage cheese (paneer) - 30 gms
All purpose Flour (maida) - 1 tbsp
Baking Soda - 1 tsp
Oil to deep fry
Gulab jamun syrup:
Sugar - 2
Water - 2
Cardamom powder - 2 tsp
Rose Water - few drops
Gulab jamun preparation method:-
First make the syrup by dissolving sugar in water. Add cardamom powder and rose water in it. Keep it aside. Mix dry milk, cottage cheese, soda, all propose flour and a little milk (if needed) to make it into a soft dough and make into small balls. Heat the oil until hot and fry the balls to a golden brown or until they are darkbrown. Soak in sugar syrup for a few hours. Garnish gulab jamun with coconut powder and serve hot or cold to your kid.

All - purpose flour - 2 tbsp
Oil - 1 tbsp

Cook and stir chicken in hot oil in pan until browned. Add chicken broth, water, vegetables, pepper and salt. Bring to boil. Reduce heat to low; cover. Simmer few minutes. Stir together flour and 1/4 cup water until smooth. Stir in chicken mixture and bring to boil. Cook for few minutes untill the chicken mixture is thickened. Dried apricots (chopped) - 4 tbsp
Almonds - 2 tbsp
